Servings: 4 servings

Ingredients

  • 6-8 chicken tenderloins sliced thin
  • 1 1/2 cups broccoli florets
  • 1 sliced yellow onion
  • 3 tablespoons olive oil
  • 1 1/2 teaspoon garlic powder
  • 2 teaspoons onion powder
  • salt and pepper to taste
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard

Instructions

  • Start by preheating your oven to 375°F. Line a large sheet pan with parchment paper if you want easier cleanup (I usually do).
  • In a mixing bowl, add the broccoli and onions and drizzle everything with olive oil and half of the seasonings, and toss gently until it's coated evenly.
  • Repeat this step with the chicken.
  • Once everything is coated and seasoned, spread your broccoli and onions across the pan, then add the chicken tenderloins right on top.
  • Spread everything into a single layer so it roasts evenly.
  • Bake for about 30 minutes, stirring once halfway through if you remember (I sometimes forget and it still turns out fine).
  • While the chicken and veggies are cooking, start your rice in the rice cooker. (I do one cup water per one cup rice. And make sure you wash your rice until the water runs clear!)
  • The chicken should be cooked through (165F) and the vegetables slightly golden and tender.
  • Serve with rice and enjoy!

Notes

You can absolutely use other vegetables if that’s what you have. That’s part of why this works so well as a simple sheet pan dinner recipe.

This is one of those healthy chicken sheet pan meals that doesn’t feel boring. The seasoning is simple but really good. The smoked paprika adds warmth, the thyme gives it a cozy flavor, and the maple-Dijon combo balances everything out perfectly.

The onions get slightly caramelized, and the broccoli edges crisp just enough to make it interesting. It’s one of those dinners that tastes like more effort than it actually took.

Ways to Serve This Chicken Sheet Pan Meal

We eat this a few different ways depending on the night.

Sometimes I serve it over:

  • white rice
  • brown rice
  • quinoa

Other nights we just eat it straight off the pan with no sides at all.

It also works well wrapped in tortillas or served over greens if you want something lighter.

Tips for the Best Sheet Pan Chicken Dinner

A few small things make this easier:

Use thin chicken pieces so they cook evenly with the vegetables. Don’t overcrowd the pan or everything will steam instead of roast. Cut vegetables into similar sizes so they cook at the same pace.

If your broccoli starts browning too fast, just stir halfway through.

Make It Your Own

This recipe works with so many variations.

You could easily use:

  • carrots
  • bell peppers
  • zucchini
  • sweet potatoes (cut small!)

You can also swap the chicken for sausage or shrimp if that’s what you have.

That’s why I love simple sheet pan dinners…they adapt to whatever is in the fridge.
