Method
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
- Mash the bananas in a large bowl. Stir in melted butter until smooth.
- Add sugar, egg, and vanilla and mix well.
- Sprinkle in cinnamon, pumpkin pie slice, baking soda and salt. Stir gently.
- Add the flour and mix until just combined (don’t overmix).
- Fold in chocolate chips if making chocolate chip banana bread.
- Bake for 50–60 minutes, or until a toothpick comes out clean.
- Cool slightly before slicing and enjoying.
