Crockpot Lasagna Soup

Yep, you can even have lasagna without the fuss. It’s rich, comforting, and way easier than layering noodles.

Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 4 cups chicken or beef broth
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • 8 oz pasta any shape
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella

Method
 

  1. Brown beef + onion in a skillet, then transfer to slow cooker.
  2. Add garlic, tomatoes, broth, and seasonings. Cook on low 6–7 hours.
  3. About 30 minutes before serving, stir in pasta.
  4. Serve topped with ricotta + mozzarella.

Notes

Add spinach or zucchini for extra veggies.
