Starbucks Copycat Blueberry Oatmeal Bars

These blueberry oatmeal bars are a soft, buttery Starbucks copycat treat made with a chewy oat crumble and sweet blueberry filling that tastes just like the coffee shop favorite.

Ingredients
  

Base & Topping:
  • 1 cup unsalted butter melted
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups old-fashioned oats
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
Blueberry Filling:
  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar
  • 1 tbsp lemon juice (or orange juice!)
  • 1 tbsp cornstarch
  • 1 tbsp water

Method
 

  1. Preheat oven to 350°F.
  2. Line a 9x13-inch pan with parchment paper.
  3. In a saucepan over medium heat, combine: blueberries, sugar, lemon (or orange) juice.
  4. Cook until berries soften.
  5. In a small bowl, mix cornstarch and water.
  6. Stir into blueberries and cook until thickened.
  7. Set aside and let cool.
Crumble Mixture:
  1. In a large bowl, mix: melted butter, brown sugar, vanilla. Mix.
  2. Then stir in: oats, flour, baking soda and salt.
  3. Mixture should be crumbly.
  4. Press about 2/3 of the mixture into the base of the pan.
  5. Press firmly!
  6. Spread blueberry filling evenly over base.
  7. Sprinkle remaining crumble mixture over top.
  8. Bake for 35–40 minutes until golden brown.
  9. Let cool completely before cutting.
  10. Or don’t.
  11. But they cut cleaner if you wait.
