Method
- Preheat oven to 350°F.
- Line a 9x13-inch pan with parchment paper.
- In a saucepan over medium heat, combine: blueberries, sugar, lemon (or orange) juice.
- Cook until berries soften.
- In a small bowl, mix cornstarch and water.
- Stir into blueberries and cook until thickened.
- Set aside and let cool.
Crumble Mixture:
- In a large bowl, mix: melted butter, brown sugar, vanilla. Mix.
- Then stir in: oats, flour, baking soda and salt.
- Mixture should be crumbly.
- Press about 2/3 of the mixture into the base of the pan.
- Press firmly!
- Spread blueberry filling evenly over base.
- Sprinkle remaining crumble mixture over top.
- Bake for 35–40 minutes until golden brown.
- Let cool completely before cutting.
- Or don’t.
- But they cut cleaner if you wait.
