Blueberry Oatmeal Bars (Starbucks Copycat Recipe)

Blueberry Oatmeal Bars

There was a season of life when I practically lived in Starbucks drive-thrus.

Coffee in one hand. One of those blueberry oatmeal bars in the other.

You know the one.

Soft. Buttery. Slightly crumbly. Sweet blueberry filling in the center. Somehow tastes like breakfast… but also dessert.

Honestly, one of the best things in that pastry case.

So naturally… I had to try making them at home.

And I might actually like these more.

They have that same soft oat base and crumble topping, but thicker. More filling. More homemade. And warm out of the oven? Dangerous.

The kind of recipe that disappears off the counter faster than you expected.
